The fruit is hand harvested, fermented as whole bunches in wood tanks before being set down to age on its lees in used oak. The wine explodes with aromas of spice, orange and purple florals; red berries spiced with black pepper. It's a wine to sit back and ponder; impeccably crafted and effortlessly elegant. Will greatly reward those patient enough to give it a bit of time in the cellar.

Hervé Souhaut is one of the most respected minimal interventionist producers in the Rhone Valley. He started his operation in 1993 with a tiny five hectare holding of 50-100 year old vines in Northern Rhône and the southern Ardèche.
